help with my cooking!?

ok! so i can cook. but i'm running out of ideas of stuff to cook.so im getting burned out on the same stuff and so is my fiance. anyone got any good recipes they're willing to share? and any helpful advice for a young lady tryin to feed her man? lol *21 btw* lol help me please! !! : )

lol i'm 20 and have already had this problem lol. What kind of stuff does he like? I have a huge recipe book of recipes i have printed off and its great to sit down together and make a menu for the week and let him pick some of the meals so he has a choice too. try tasteofhome.com they have plenty of recipes! or if you want to email me with an idea of what he likes i can sure some really yummy recipes with you.... like chicken enchiladas they are great. I also have a ton of cookbooks i can look through. Just hard to give recipes without knowing someone's taste =]
 
One thing that I make that my hubby and kids LOVE is fast and easy chicken quesadillas. I buy a large can of good quality chicken breast meat (costco has a good one Kirkland Signature) I drained the canned chicken and toss it on a skillet with a little cooking spray and then put in a few spoonfuls of our favorite salsa (we like Newmans own organic salsa) stir occasionally and when its all mixed and hot I turn off the flame and on another flat griddle I butter some flour tortillas place on hot griddle put chicken cheese fold over and flip when one side looks golden and repeat. These turn out cheesy and zesty. I sometimes make a side of mexican rice or beans or both...the family loves it and its easy
 
Oven Fried Chicken
Ingredients:

1/3 c. vegetable oil
1/3 c. butter
1 c. all-purpose flour
1 tsp. salt
2 tsp. black pepper
2 tsp. paprika
1 tsp. garlic salt
1 tsp. dried marjoram
1 whole chicken, cut up

Directions:

1. Place oil and butter in a shallow cooking pan and place in 375 degree oven to melt butter, set aside.

2. In a large paper bag combine dry ingredients. Roll the chicken pieces 3 at a time in butter and oil then drop into a sack and shake to coat. Place on a plate until all pieces are coated.

3. Leave any excess butter and oil in pan. Place chicken in the pan skin side down.

4. Bake at 375 degrees for 45 minutes. Turn chicken pieces over and bake 5 to 10 minutes longer or until crust begins to bubble.

Serve with warm buttered crescent rolls.


MEXICAN SHEPHERDS PIE
OVEN WARMED TORTILLA CHIPS


Mexican Shepherds Pie:

1 package (6.6 ounces) instant homestyle mashed potatoes
1 pound ground beef
1 medium onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (11 ounces) Mexicorn, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 envelope taco seasoning
1-1/2 teaspoons chili powder
1/2 teaspoon salt
1/8 teaspoon garlic powder
1 cup (4 ounces) shredded cheddar cheese, divided



Prepare mashed potatoes according to package directions.
Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
Add the tomatoes, corn, olives, taco seasoning, chili powder, salt and garlic powder. Bring to a boil; cook and stir for 1-2 minutes.
Transfer to a greased 2-1/2-qt. baking dish. Top with 3/4 cup cheese.
Spread mashed potatoes over the top; sprinkle with remaining cheese.
Bake, uncovered, at 350° for 12-15 minutes or until cheese is melted.

Serve with warmed tortilla chips.





BAKED BEANS WITH HAM

CORNBREAD

Use a box of Jiffy Mix cornbread and follow the directions on the back of the box

Baked Beans with Ham:

1 can (28 ounces) baked beans
2 cups cubed fully cooked ham
1/4 cup tomato paste
2 tablespoons molasses
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon dried minced onion
1 teaspoon taco seasoning
1 teaspoon minced fresh cilantro


In a 1-1/2-qt. microwave-safe bowl, combine all ingredients.
Cover and microwave on high for 3-5 minutes or until heated through, stirring once. Serves 4.
 
Rigatoni With Sausage and Vegetables

8 oz. (3 C.) uncooked rigatoni (pasta tubes with ridges)
1 lb. Italian turkey sausage links, cut into 1/2-inch slices
1 small onion, cut into thin wedges
1 garlic clove, minced
1 (9 oz.) package frozen sugar snap peas in a pouch, thawed
1 medium yellow bell pepper, cut into 1-inch pieces
1/2 C. chicken broth
1 t. dried basil leaves or 1 T. chopped fresh basil
1/2 t. salt
1/8 t. pepper
4 Italian plum tomatoes, coarsely chopped
2 T. olive or vegetable oil
shredded mozzarella cheese

In Dutch oven or large saucepan, cook rigatoni to desired doneness as directed on package. Drain; return to Dutch oven. Cover to keep warm.

Meanwhile, cook sausage in large skillet over medium-high heat for 5 minutes, stirring occasionally. Drain.

Add onion and garlic; cook and stir 3 minutes. Add sugar snap peas, bell pepper, broth, basil, salt and pepper; mix well. Bring to a boil. Reduce heat; simmer 3 or 5 minutes, or until sugar snap peas are crisp-tender and sausage is no longer pink.

Add tomatoes and oil; cook over medium-low heat for 3 to 5 minutes or until mixture is bubbly, stirring occasionally.

Add to cooked rigatoni; toss gently to mix. Sprinkle with cheese.

Makes 4 (2-cup) servings.


Bacon Swiss Pie

12 slices bacon, crisp cooked and crumbled
1 cup shredded Swiss cheese
1/3 cp chopped onions
1/2 cup Bisquick baking mix
1 cup milk
1/8 teaspoon pepper
2 eggs

Heat oven to 400ºF. Grease 9-inch pie plate.

Sprinkle bacon, cheese and onion in pie plate. Stir remaining ingredients until blended. Pour into pie plate.

Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes.
 
Sandwiches. I love sandwiches. Any kind of meat, with any kind of cheese, with any type of vegetable. Try frying the cheese too, it's better than bacon.
