For the future reference of anyone else experiencing this problem, here is the explanation and solution:
The Asian-Pacific version of the E61 (mine anyway) comes with a default English system-font, which works fine throughout the operating system for general purposes, but it is not a true-type font like the ones found on desktop computers.
When you load a Word doc or txt file that was created on a computer, the E61's document reader/editor program recognizes that it was created using a true-type font (Arial, Times New Roman etc) and will try to render it in the closest similar true-type font it can find in its font folder. For a Euro/English E61 this is no problem, as it comes equipped with several standard western true-types, and will revert to one of them. For the A-Pac version however, since it has no English TTF's, it automatically reverts to the only substitute it has available, a bizarre wingding set that only shows squares, numbers and punctuation marks (and the capital letter E, for some reason). Thus all you see on the screen is a bunch of garbled squares instead of the expected alphabetical characters.
Here is the solution: You need to load one or more true-type fonts onto the E61 so that it will have them available for rendering word documents. Note that you do not need to have lots of them, or even the same one that the document was originally created with. Any font can be substituted for any other one (courrier for verdana etc), as long as they contain the same character set.
You can't access the default Fonts folder on the phone's C Drive because it's protected - (I am investigating whether it can be accessed with FExplorer, not sure yet) - so you must create an extra fonts folder on the E Drive (memory card). Using the USB cable put the phone into data transfer mode, and with Windows Explorer navigate to the folder on the phone called Resource. Within that folder create a new folder called Fonts.
Into that newly created Font folder you'll need to place some truetype fonts. You can get these from your computer if you like, they are in the C:\Windows\Fonts\ folder. Look for the ones with the .TTF file extension. Note that Arial and Times New Roman do not seem to work too well, but other standard ones like Verdana, Tahoma etc work fine. You can also get truetype fonts from anywhere else you want on the net, they are available everywhere and easy to find. Again, you don't have to go craxy copying dozens of fonts to your phone unless you really want to. Just one or two work fine, as there is not that much difference between them.
If you want the default E61 Euro/English fonts, I will try to attach these to this message at the end, in a zip file you can download and unpack. Copy the fonts into the phone's Resource\Fonts folder. Then end data transfer mode and disconnect the phone. Turn it off and restart it, and from now on all the fonts you loaded in should be accessible to the Doc Writer app.
There is an important addendum to these instructions. From now on, you won't be able to put your phone into data transfer/mass storage mode the normal way anymore, since the E61 now considers the memory card's Fonts folder to be in-use all the time. If you try, it will tell you so. You can still use data transfer mode with the memory card if you really need to though. Just turn the phone off, remove the memory card, then turn the phone back on, let it boot up fully, and then insert the memory card again after it's fully booted. You can then use data transfer mode again, as the memory card's Fonts folder won't have been activated during bootup. When you're done, just restart the phone with the memory card installed and the extra fonts will be back in action.
I hope that is all clear, and will be of help to anyone encountering this problem in the future. If there is any confusion, just ask and I will try to explain further. One question I will not be able to answer however is: Why on Earth doesn't Nokia include the standard English fonts on all versions of it's phones? For the love of lemons, it makes no sense. Even on A-Pac versions the operating system still uses English as the default language.
