Has anybody ever tried to bake cucumbers and then eat it with salsa (instead of chips?)?

I think that because cucumbers are so full of water they would shrivel to nothing when baked. Maybe you should trust buy veggie sticks or chips in your grocers health food section. (they are great)
 
I forgot to add that I would probably add some olive oil to them, & salt.. then into the oven;)
I was on a diet and used cucumber slices in replacement of chips when I craved salsa. That way, I didn't have to give up my devotion to salty salsa but at the same time didn't feel terrible after eating many chips.

so-does anybody know if I could try this weird way of eating with baked cucumber instead of just raw? The main thing is I want it to maintain the crunch, which I think has the most appeal when snacking.

awww thanks. I had forgotten about the water in them. I'll try the reg veggies, thank you girl
 
cucumbers have too much water in them and won't crisp up they will shrivel up. i like to use fresh sugar snap peas with salsa they taste good raw and are crispy so you have that crunchy texture you want with salsa.
