Hard to come to a decision on what religion the children will be if one parent

is Catholic, the other Jewish? Two people of different religions decide to have children, but.......they may have a difficult time agreeing on whether to raise them as either Jewish or Catholic, since they can't be both (can't be baptised/have communion&confirmation AND Bar/Bat Mitzvah. The problem with letting them decide which religion they will follow once they are old enough is that they may not be interested in any religion at that point, or they may not to want to pursue one more than the other... leaving them basically as being an atheist since they have not gone through baptism or Jewish practices. It is hard to come to a decision, especially when one parent feels if they are raised as Jewish (the fathers religion), they will not be interested in the mothers religion (Catholic) and will identify with her less.... although they will still celebrate Christmas and Easter, there still feels as if it is almost not fair, or as if the mothers religion or opinion on the children being catholic is just swept under the rug. It seems almost impossible to come to a solution. What makes more sense to work out in both the mother and fathers favor?
