"Growing the beard" moments

The first season finale of Avatar was pretty much the point where the show went from good to great and really "grew the beard". Season 3 completely killed it though...
 
Justice League found it's creative footing in season two, and really took off when it turned into Unlimited during the whole "Cadmus" arc.

And The Simpsons first attained true brilliance in season three. While season two has some classic episodes as well, there was still a lot of fine-tuning going on with character voices and personalities (I watched "Three Men & A Comic Book" recently, and Hank Azaria's first crack at the Comic Book Guy's voice is distractingly "off").

And Jackie Chan Adventures was improved when Tohru[sp?] became a good guy in the second season.
 
I didn't reply to this topic at first because I thought it meant characters growing a literal beard. Damn TVTropes.

For me, that started as early as "Bullocks to Stan" and "A Smith in Hand".
 
^This. I never watched the show until it was in the 2nd season and I honestly think that the first season is one of the most boring things in the world.
 
I believe The Venture Bros grew the beard at the beginning of Season 2, when the characters became more developed.

Urusei Yatsura grew its beard around episode 40 I believe. Before that, the stories were kinda lame and the character designs pretty ugly. I think it may have also been the point when the animation studio started making the show more their own and less like Rumiko Takahashi's original manga.

The Simpsons grew its beard near the end of Season 1 with "Krusty Gets Busted".
