7. (a) Comment on the dangers associated with the following common practice: Raw hamburger patties are carried on a plate to the barbecue and then the burgers are placed on the grill, where they are cooked thoroughly. Then the cooked hamburgers are taken from the barbecue and are placed back on the same plate (which has not been washed) and carried into the house for serving.

(b) Why do you think eating a medium-rare steak does not pose the same risk as eating a medium-rare hamburger?

22. Preventing and controlling bacterial growth is a major concern within the food industry. Suggest some advantages and disadvantages of the following food preservation methods: freezing, canning, dehydration, pickling, and salting. Can you name some other methods?
