Ren and Stimpy should be noted for its importance not just in terms of pushing content limits, but also for it's artistic influence. Ren and Stimpy was one of if not the first TV cartoons to skip over formal scripts and plot out the show mainly through storyboards. This gave the main creative team more control over how the show was going to look. Most original slapstick-y comedies as well as some more visual-based action cartoons like Samurai Jack have done this since.
Even if the show grossed you out, which is an understandable reaction, it still has good characters (better rounded and developed than, say, Beavis and Butthead, for sure), great character animation, and if you didn't find Log or Happy Happy Joy Joy the slightest bit amusing, I'm just going to assume you were trying to find it irredeemable.
And Superjail is a lot more fun than most of what airs on Adult Swim these days. At the very least, it's the most natural-looking use of Flash animation ever.
As far as current cartoons making the list in the future, I'm surprised you didn't mention Adventure Time. It's hit or miss but at its best it's very creative and inspired, like an LSD-fueled mash-up of Dungeons and Dragons and Spongebob Squarepants. If it has a good run I can see it on a Top 100 list in a few years. Sym-Bionic Titan was unfortunately cut short, but for pure quality it might be worthy of squeezing in around the 80s or 90s.
