Gardening in Southeast Texas?

Hey Fellow Friends...

I live in south east Texas... Yeah it is hot here... 100 degrees or so today... I have a few questions about gardening.. I am new to gardening and wondering what is going on with my squash I planted a few months ago. I planted just a few yellow squash seeds back in May or so. The seeds sprouted to make some wonderful plants and then flowers; but no sqaush.... I have blooms (alot) on each plant... they flower then nothing. Why? I am assuming it is the heat however being new to this not to sure. What do you think? I water EVERY day. My next question is in regards to a winter garden. I was told by some others that I can plant summer veggies in the winter here because this area does not get too cold. Is this true or would I be wasting the time on the summer veggies? Also to make a successfully flourishing garden when would you suggest I plant? If anyone can help me please do... VERY new to this but very interested.......
