Gardening for kids (sunflowers)?

I will be participating in a kids event this summer and I'm considering letting them plant a seed and take the pot home. According to my research it seems that sunflowers are some of the best suited plants for kids. They are supposed to be easy and fast to grow. I have a couple of questions I was hoping to get help with:

1. Can I do something to speed the germination process further (i.e. soak the seeds before hand or similar)?
2. Do they grow better in certain types of pots (clay) or are simple plastic ones ok?
3. What else could I do to help the kids actually get the plant to grow and thrive once they take it home? (The participating kids tend to be from underprivileged families where parents are not that involved).
4. Any other ideas for making this a success?
