Anything by Zhang Yimou, including Red Sorghum, Raise the red lantern (already mentioned), Judou, Hero, Curse of the Golden Flower. If you like chinese history, The warlorRAB is good or Red Cliff. Of course, early John Woo films like 'A better tomorrow' are classics, imo.
Japanese horrors, I don't know which you've seen, but I assume you've watched Ring and The Grudge etc, but there's also Dark Water, and there are quite odd ones like Tetsuo, or Death Note.
