ford escort gti thermostat?

1.8 GTI 1998. we have just replaced the lambda sensor and the idle air valve now the only problem we have is the temp. gauge... it goes all the way to the red when the ignition is set to contact but as soon as we fire her up the temp goes back down and doesn't move. im fairly sure this is the temprature sensor thats gone but my friend is not so sure... wonder if anyone out there in yahoo land has any ideas and tips
