Easy Lasagna
1 lb hamburger
1 package grated mozzarella cheese
1 jar spaghetti sauce
16 oz cottage cheese
1/2 package (9) lasagna noodles
Bring a pot of water to a boil. Cook noodles until almost done; drain. Brown hamburger and drain. Put a small amount of sauce in the bottom of a 13x9 pan. Lay out 3 noodles. Spoon 1/3 meat, cheese, cottage cheese, and sauce over noodles. Repeat layers. Bake at 350 for 60 minutes.
Porcupine Meatballs
1 lb hamburger
1 egg
1 box beef Rice-a-Roni
chopped onion
Combine hamburger, egg, rice, and onion. Form into meatballs about the size of walnuts. Brown on all sides. Add seasoning packet and 2 1/2 cups hot water. Cover and simmer 20 minutes.
Chicken Courdon Blue
4 boneless skinless chicken breasts
4 slices ham
4 slices provolone cheese
crushed croutons
Pound chicken flat. Top with ham and cheese. Roll up and hold in place with toothpicks. Roll in crouton crumbs. Bake 40-45 minutes at 375.
