Some easy chicken recipes, using one package of boneless chicken breasts (1-2 lbs):
Pour a 28 oz. jar of red pasta sauce (any kind except meat flavor) over the chicken in a glass baking dish, and cover tightly with foil. Bake at 350° for 45-60 minutes till tender and done. Serve with lightly buttered pasta and pour the sauce over the pasta and chicken. Top with grated Parmesan cheese and add a salad on the side.
Stir together till smooth one can of condensed cream of mushroom soup, and 1/2 cup white wine or 1/2 cup chicken broth. Add 1/2 teaspoon each dried thyme and tarragon, and one drained can of mushroom pieces. Mix well and pour over chicken, cover with foil, and bake at 350° for 45-60 min. till done. Serve with white or brown rice and a hot vegetable.
You also can't go wrong with pasta and a salad. Buy a 1 lb. box of pasta, a 28 oz. jar of any kind of pasta sauce, a shaker of Parmesan cheese, a bag of salad, bottled salad dressing, and frozen garlic bread if you want. Fill a large pot with water nearly to the top, cover, and bring to a boil. Add the pasta, stir occasionally, and boil till al dente - bite it and make sure it's done but not mushy. While the pasta is boiling, follow package directions on the garlic bread to bake in the oven. Heat up the pasta sauce in your microwave in a covered micro-safe container, about 1.5 min, or on the stove in a saucepan till hot. Put the salad in a big bowl and toss with dressing, or let everyone do their own. When the pasta is cooked, carefully drain it into the sink through a large colander or drainer, return to the pot or a large bowl and stir with a little butter or olive oil to keep it from sticking. Serve topped with sauce and Parmesan, with salad and garlic bread on the side.
Easy dessert:
Thaw a frozen Sara Lee pound cake, frozen strawberries in a tub, and Cool Whip. Top slices of cake with berries and Cool Whip. You can also use fresh berries. Wash them, cut the tops off, slice and mix with sugar. Let sit in the fridge for an hour or so, then use the same as the frozen ones.
