Lol....call me chicken then. I have anemia and supper time it's at it's
worst. I try to do my prep work over the spread of the morning. Simple
last minute meals such as slow cooker meals and casseroles that can be
prepared over a space of a few hours works for me. I've never done a
souffle, but do like to do bread puddings. ......Sharon in Canada

Thanks sf. It's an ongoing thing I guess and I take iron tablets that
sometimes upset my stomach. Not much chance it'll get better. I'll just
get better at adapting to it. Hubby does not cook, but never complains when
I restort to soup and sandwiches. He helps where he can, but I'm a control
freak when it comes to my kitchen. I like to make my own soups and can do
that over a few hours as I'm up to it and our freezer has lots of home made
stuff that can be heated when I have a bad day. It's just the two of us and
I never adapted to just cooking for two. We don't have large appetites any
more either. I don't use a lot of convenience foods, so manage fairly well.

I'll have to consider one like that. I have a 5 cup and when I make
jambalay, it leaves a lot to put into the freezer..lol... I don't like to
leave any leftovers in the freezer too long. When I do meatloaf, I do a 2
pound mix and make two smaller ones. Even then, one makes two meals (hubby
doesn't mind leftovers. The second one gets wrapped well and frozen. It's
been two years since my diagnoses and I've been adapting pretty well. There
are some days, though that I get him to pull a container of soup and make a
sandwich for himself.
We sure won't starve. I have to restrain myself at the grocery store,
though, and remind myself of all the stuff we have in the freezer. I also
have a slow cooker and an electric fry pan, a panini grill, and a few other
treasures....We used to yard sale and got a few good bargains on nearly new
appliances.

She took prescription iron pills for 2 years. :/ The Drs were
getting worried because the blood tests weren't budging, but Mom said
she felt better and was "going with the placebo effect"... and a
couple of months later, tests confirmed her body was finally
responding.
