Exactly what do people mean when they say "Eating Healthy"?

The best advice I can give you as far as eating healthy is to keep in mind the words "all things in moderation". A healthy diet is heavier on the vegitation than meat, yes- but it doesn't mean eating rabbit food all the time, to the exclusion of other things. Even the goodies have a place, albeit a small one. If you want to get an idea of a good general diet, go to the FDA website and download the current eating guide. It will show you roughly how many servings of fruits, veggies, pasta and grains, meat, and sweets you should aim for each day. You don't even have to give up the processed foods entirely- although you should become a label reader and give that package a good read to find out exactly what you are eating. There are even cookbooks out there, a series called Semi-Homemade, that uses convenience foods to make other dishes easier. While it's best to eat your foods in the least processed manner, if you will only eat your broccoli with a coating of Cheese-Whiz, at least that's better than not eating the broccoli at all. If all this really just leaves you puzzled, see if you can find a registered dietician to help you sort it all out. Most of them are not actually granola eating fanatics, wanting to rid the world of all things that taste good. And if all this still fails- I suppose you could always go by the guidance my grandmother gave me. Breakfast should be a grain, a fruit, and a dairy. Lunch and dinner should be one protein, three veggies, and a dairy at least for one meal. Snacks should be fruit, once or twice a day. I guess her method worked for her, since she lived well into her 90's. She also told me you should always eat the peels if it's at all possible- peels on fruits and veggies both. And in the end, moderation in all things. I still think it's valid advice, in life and diets.

Does it mean eating like a rabbit all the time, and staying away from all processed foods; is it eating meat all the time and keeping away from processed foods or is it eating anything that you can get your hands on but not a lot of it?

There's much more that i could have put down here, but I'll leave it to you to tell me that, after all, YOU are answering. lol.
