Essay writing question?

I am trying to identify the author of a book and a girl mentor, coach, educator like this:

Rachel Simmons, founder of The Girls Leadership Institute, suggests in an excerpt of her book (underline or italics) "Odd Girl Out"..............

My question is...do I underline or use italics or quotation marks for the institute she started?
