I'm not entirely sure about the reactions shown in the links at the end of this message (you will need to copy and paste into your browser). What is the GOT and MDH over the double ended arrow? What does it mean?
I am also getting confused with L-Malic acid, my lecturer mentions its not the same as the L-Malic acid in the citric acid cycle, then I found information on L-Latic acid and become even more confused.
I don't understand why the wine industry needs to convert L-malic acid in wine, lecturer mentioned it is not stable, attracts yeast growth and it is converted to Lactic acid with bacteria, although I can't find any references.
I need to be able to explain detail about:
-Explain the steps i.e. reactions;
- enzymes L-malate dehydrogenase (MDH) and (glutamate oxaloacetate transaminase) GOT;
- Time and rate;
- Why adding nicotinamide adenine dinucleotide (NAD+);
-Draw structures
-Discuss and show electron transfer
