I'd tinker with the one you posted for starters. I'd eliminate the
powdered sugar, but would probably use maple syrup instead. I'd use a
slightly tart apple, maybe cut back the brown sugar too.

You can also add some chunks of cooked sausage to give it more of a savory
balance.

My Dutch baby recipe: (
Set oven to 425.

Put in oven a round oven proof dish.

In medium bowl, lightly beat 2 eggs (OR 1 whole egg and the whites of
2 others, to cut cholesterol)

Mix in 1/2 C skim milk, 1/2 C flour, dash of cinnamon, nutmeg, 1/4
tsp. salt to form batter.

Add 1/4 C butter or margarine to the hot dish in the oven.

When melted , carefully remove hot dish from oven,
SLOWLY pour batter into center of dish so that the batter wells up
around it.
Bake 18-20 minutes til golden brown and puffy.
Remove from oven, sprinkle powdered sugar and 1 T. lemon juice over
it. Cut into quarters and serve.

Darn - now I wanna make one. It's been a while. I Like to dump
sauteed apples slices and maple syrup over mine, or blueberry
preserves, watered down. Or just warmed applesauce.

I make my cornbread in the same pan I fry eggs. Dutch Babies/GP puff
up like a souffle/Yorkshire Pudding/Toad in the Hole. Do you have a
Pyrex dish or some other casserole dish? Most small DB are for two,
so if you do a one egg DB you'll need a smaller dish. Don't plan on
making enough for leftovers, it's not as good later. HTH
