I've never soaked beans when I've cooked them and was wondering if that would be a problem? I usually just put a cup of beans in a large pot and fill it near the top and cook them for 2 hrs and there perfect. Anyone else do something similar to this?

I rarely soak beans, they need the water changed every one - two hours and I don't want to mess with it.

Quick soak method: wash beans. Put in cool water and bring to boil. Turn off heat and cover. Let stand about 20 minutes. Add any 'grease' and then cook as usual, your cooking time will be cut almost in half.

Yes, it is all right to just cook the beans. You just have to cook them a little longer. Which I have done many times.

Restaurants don't soak them either. Soaking them only reduces cooking time. In India they soak rice before they cook it, because fuel is expensive. The rice comes out the same.
