Does pickling and freezing leech nutrition the same as cooking?

Does pickling and freezing leech nutrition from foods the same as cooking foods?
Here are some other questions!
If you boil veg but drink the stock- are you still losing nutrients?
How much nutrients do you lose if you juice a piece of fruit or veg, & discard the pulp?
I mean Leach... dern spell checker. (same difference <.<.... )
 
Every kind of processing destroys some nutrients and enzymes, but no, not as much as cooking. This is assuming that you are freezing or pickling your own produce. If you purchase pickled or frozen items, they have already been cooked.
