Does cooking food always change the alkalinity?

When I'm cooking food does it matter how I cook it if I want to keep it from becoming too acidic? How does cooking food affect alkalinity when it comes to boiling, baking, and frying?

I understand that olive oil is alkaline. If I cook or fry with olive oil does that keep it alkaline or not?


Any details you can give me are appreciated. Thank you ahead of time.
