hot day (driving 75 for 30 miles)? History

The water pump went out so I got that replaced. It ran fine (25 hrs of continuous driving on a road trip). Then a month later it started overheating while driving on the highway. I found out that the cooling fan wasn't working properly and also the thermostat went bad. After fixing those problems it still wasn't working properly. Finally found out that when it overheated it warped the head, so I got the head refinished and new head gaskets put on. I thought that fixed the problem, but it didn't. I took it into a radiator shop and they said the radiator and hoses are all fine and working. I had another mechanic check the rest of the cooling system, and he couldn't find anything wrong. I did a compressure check to see if my cylinders were still good after the head job, and it came out fine. I also just put in new spark plugs and a new distributor. So now I don't know what else could be wrong? A friend suggested the fuel maybe running lean and creating a hot engine
I spoke with them a little about it because my mpg has decreased from 38mpg to 30mpg after the head job. They told me everything they did to it (cut some of the aluminum out and then refinished it off by adding some new). But they said that it came out fine and there were no problems.

If the head is the problem wouldn't it show some kind of signs?? The compression test comes out ok which should indicate no leaks at all. Also there is no evidence of coolent in the oil and no oil in the coolent. In addition the exhaust doesn't smell funny.

Any other suggestions?
