Does anyone know where to buy the main ngredient, and how to cook the "national

dish" of...? ...Peru?
I was told about their national dish (let's call it meat on a stick for the more sensitive ones) before planning a trip to Peru. I even got to a Peruvian restaurant to try some of their dishes and this was on the menu. Although I was hesitant, I ate some and discovered it was delicious.

Now I want to make some for my next bbq but have no idea where to buy the main supply nor a cooking method. Can anyone help?

Thanks
