Does anyone know what would cause blackness in a grill. Like when you cook the meat

You may need to use a metal brush to clean your grill. I always do mine and it works great. Burning can cause meat to be black or adding sugar to a marinade could also make it burn easily.
 
depends on in streaks or all over?

the grill grate is hot and it will cause burns where in contact with meat the same as you and i burn when getting to close to something hot.
all over well it is direct contact with flame and burning move away from direct fire or move meat higher from flame.
i made a drum grill here and split it directly in half the lower is the fire box the higher the top or smoker, which can be layed out and have a double grill also.
but i set the fire low in the box and smoke the meat done rather than charring it sometimes it can take hours to cook a huge chunk of oinker.
if a whole oinker is desired then do this dig a pit in the ground about four feet deep, fill with wood and start it burning get your oinker ready by injecting it with hot pepper vinager and onion spices with sugar, wrap it in foil about six layers thick. check your fire if you have a good deep bed of hot coals after the opinker is wrapped with all the foil roll it in. after the firse is out douse with water and dig miss piggy out then enjoy southern style true pit cooked br b que
