Does a 2005 ducati 749s have a manual choke ?

No, no choke as fuel injected.

But if it's stuttering a bit on start up, there shoulde be a twisty knob on the left hand side of the engine, which will adjust your idle speed. Only turn it a little bit to the right to increase revs and anti-clockwise to drop the revs.
 
Fuel injection so nope. However, I would imagine it has a 'fast idle' switch on the handlebar that gives a similar effect to warming the bike up as a choke would

lever on the handle bars left side next to the switch block..

use it every morning when you start the bike... & during the day if the bike has been stopped for awhile ( especially if its cold out)..

but just guessing... that's where it is on my Ducati 800 sport
