Do universities prefer 3 years of the same foreign language?

I am currently a sophomore in high school. I'm finishing up with Spanish 2. I'm not sure if I should take Spanish 3 next year since Spanish 2 is pretty hard for me.

The problem is that UC's and private universities "recommend" 3 years of the SAME foreign language. My counselors and teachers tell me in college term "recommend" really means either take it or give up wishing to attend the school.
Though, I hear some students manage to get in to the college they want just because they have diverse classes. Some took 2 years of Spanish and 2 years of German.
I'm really confused on what I should do.
Should I take 3 years of the same language = Spanish, or switch to another easier language = German = a class that I will be able to survive. I'm just afraid colleges might think I'm not the committed type of student just because I'm switching languages. Plus, they "recommend" 3 years, so if I don't take it, will it be a dumb choice? Please post your thoughts and opinions. I'd really appreciate it.

PS. I'm also taking 4 AP classes next year, and Spanish 3 will be pretty hard for me. It'll be like taking 5 AP classes. Is it really recommended for 3 years of the same language? Do colleges care that much?

Starry, since my native language is Spanish, I can understand how hard Spanish can be for you, because English was a little bit hard to learn, but if you really focus and try hard I'm sure you could do it. I think you should take a third year of Spanish.
