Do the buffet dinner places employ a professional chef to oversee food preparation?

everything seems to be displayed in a professional manner. salads are attractive, as well as the fruits and desserts. of so, my complements to the chef!
Just because they call the dishes by a French name, does not make it better, and not everyone is a nise in the air "Chef" Give me a country cook!

At the very least, someone is the boss of the kitchen, perhaps they have a chef at the headquarter store that does the instruction? They are pretty good!
 
Yes, they do. Even the mom and pop operations have a chef who will assure you they are "professional". Most of these key personell have been through a formal education process in food handling and safety, and have had at least a few years of on the job training.
 
Most places do employ a chef. And, that individual oversees the preparation, cooking, set up, etc., of the buffet line. (For example, in Nevada, as a matter of fact, all the casinos with buffets and / or restaurants have a chef. It's pretty much a given.)
