Do human beings adapt to a changing environment?

My science colleague have told my students that human beings do not adapt. Human beings only accustom to their environment and change it when it is needed in order to survive. I definitely agree on the second, but I truly believe that human beings have the ability to adapt. For example, if you move to a hot climate your body will sweat a lot in order to cool you off, but that is something that will happen for a couple of weeks then after your body will set up the natural thermostat at a higher temperature and you will stop losing so much water and will retain more. That is an adaptation to me. The same thing will happen if you move to a cold weather place, you never accustom. If you just accustom your body will continue losing water and you will just accept it and that's it. Can somebody help me with this.
