Dinner last night, Special treat and Recipe

Dee and I love to surf fish and eat our catch. Last nights dinner
rewarded our efforts.

Fresh caught fillet of Barred Surf Perch.
From scratch, Yukon Gold French fries.
Deluxe Hush Puppies.
Green salad with Blue cheese dressing.

Note: I put my name on recipes that I have originated or modified.
This helps me find them in my collection of thousands.. It is not an
ego thing.

Wayne?s Deluxe Hush Puppies.



Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup cornmeal
1 cup masa harina
1 cup buttermilk
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs -- beaten
1 small onion ? minced
1 cup cheddar cheese
1 Jalapeno minced
oil for deep frying

Heat oil in a deep fryer to 365 degrees. In a large bowl combine all
ingredients, except oil, and mix until well combined. When oil is hot
drop batter, by tablespoons, into hot oil. Fry until browned on one side
and floating, turn and fry on second side. Remove and drain on paper towel.

Yield: 1 1/2 dozen

I'm also an avid surf fisherman. We have a fish that looks very
similar to the Barred surfperch (Amphistichus argenteus), but ours
here in Florida is locally called a "Croaker" and it is the Atlantic
Croaker (Micropogonias undulatus).

The croaker has sweet, off-white meat that flakes well and is a
favorite in fish gumbos.
