Diabetic Cooking Methods - not recipes?

Does anybody know of a really detailed and easy to read - with step by step pictures and instructions - on HOW to cook healthy foods for diabetics? I have over 30 diabetic cookbooks that are filled with recipes, but very few even explain in the detail exactly how to accomplish these things.

For instance: my husband loves baked fish but I don't know how to cook it. I mean to say that I don't know how to buy a good, fresh fish. I don't know how to cut it or prepare it. I don't know what seasonings or garnishes go good with fish. I don't know how long to bake it or the secret to a flaky fish. I don't know what utensils are best to use when preparing fish or other items I may need (such as string, foil, etc. And that's just for fish.

I do not know how to cook. My mother, rest her soul, didn't cook anything that wasn't opened out of a box, a can, or take-out. I can muddle through heating prepared food in a can or making basic items like scrambled eggs and toast, but I need to cook multi-course, healthy, and hearty meals for my critically ill diabetic husband that my children will also eat.

I HAVE NOT BEEN ABLE TO FIND SUCH A BOOK, no matter where I have looked including in stores, online, etc. Even the American Diabetic Association doesn't have that kind of book; I guess most people assume that if you're the chef of the house then you know how to cook. :)

Can anybody please help me with any suggestions, good or bad. My husband came home yesterday from the hospital - the 3rd time since November 3rd due to diabetic complications from high blood sugar. I absolutely MUST learn how to do this.

Please, I'm begging anyone with any information. But it does have to be a book so I can carry it with me and photocopy the pages. I have rheumatoid arthritis in both hands & arms and cannot do much writing and I also have chronic herniated disc from L2 through S1 and cannot sit long enough to scan the millions of pages of the internet to find what I'm looking for.

So I'm depending on you, the Yahoo Ask buddies. I've never seen you let somebody down yet and I have complete faith that you are the only ones who can help me.
