Foo Fighters have a couple:
"Baker Street" by Gerry Rafferty
"Have A Cigar" by Pink Floyd covered with Brain May from Queen on the Mission Impossible 2 soundtrack

and Red Hot Chili Peppers have a few:
"Fire" by Jimi Hendrix
"Higher Ground" by Stevie Wonder
I love in concert when they play part of "Your Gonna Get Yours" by Public Enemy as a lead in to "Give It Away".
and I'm probably the only person on Earth that likes it, but their cover of "Love Rollercoaster" by K.C. and the Sunshine Band
 
^Agreed. Another entire album full of good covers is Metallica's Garage Inc. Granted, their original material and pre-haircut songs are best, but they did a kick ass cover of Hank Williams' "Tuesday's Gone". (It even had John Popper of Blues Traveler on the harmonica.)
 
This may never happen, and it may also be a bit off topic... nevertheless I'd totally love to see a band like Radiohead cover an old Midnight Oil song called Scream in Blue... brilliant song that would totally suit Thom Yorke's vocals perfectly :-)
