Blue cheese keeps well if wrapped properly. As long as it wasn't on
it's last legs when I bought it, I can make it last a month or more
depending on the variety (the harder the better, of course).
I didn't like it until I was about 21 or 22. I had always shunned it
since a kid remembering my mom eat that shit - and the smell .
Then one morning at brunch at Il Fornaio (San Francisco) I was served
a slice of fried polenta with creamy gorgonzola on top. Eww - I
started to eat around it and decided, "Oh, What the hell"... and dug
into the cheesy part.
Ever since then my Pre-Cheese days are just a foggy and fading memory.
