Correct way to cook Orange Roughy?

The last time I cooked orange roughy fish it turned out very rubbery and weird. I bought it frozen, defrosted it, and baked it in the oven. I'd like to try it again but I'm wondering what is the best way to cook it? I'm open to grilling, stovetop, or oven cooking. Please include temps and cook times :)
