cooling issue for a cadillac deville northstar?

I have a 1996 cadillac deville with the northstar engine. about a month ago I put in a new water pump. everything worked fine until yesterday morning. I was in line at school to drop of my daughter and the car went way up to 260 degrees in a flash. let it cool added water let it idle car ran fine drove around the block ran fine, so I thought must be a sticky thermostat. changed thermostat filled with 50/50 antifreeze water and let idle for a long time then drove to gas station then idle while filling up etc never went over 201 degrees. then today drive around doing errands and everything is fine running between 199 and 208 then go to the car line at school and after about 8 minutes it goes way up to 240 degrees again. The fans are working and there are no visible leaks and no water in oil. is 240 degrees a danger zone? what else could it be? I know this is a long post but I wanted to get all the information in there for you. thanks a bunch for your ideas.
 
Does your car run rough when you first start it in the morning?? If not, then maybe your head askets are ok

I would change out your radiator cap/coolant reservoir cap with a new one but try to use a GM brand, some aftermarkets I noticed don't last very long & are not very realiable.

If your having to add coolant, are you hearing a boiling sound from your coolant boiling out???

Sometimes the radiator cap doesn't let the pressure reach a certain threshold & doesn't raise the boiling point
