What are some things about cooking that have always been taken as truths, but in your experience has never (or rarely) been true?

For me, it would be that a good pie crust is one of the easiest things to make.

What are some of yours?
 
Pie crust is the one that immediately came to mind. I think another one would be that fresh vegetables are always better--in some dishes, frozen or canned vegetables are just a better way to go.
