Cooking small bell peppers?

We're big fans of peppers and eggs. Slice the peppers into thin strips and fry them in a non-stick pan until they are soft. Scramble a few eggs and pour the eggs of the peppers. You can get a little fancy and put in a slice of cheese too. You can eat this on a plate or it's even better on a roll.
 
Okay, I just bought some small bell peppers and don't know how I should prepare them. I can't eat raw veggies (directed by my doctor), and since I'm a student and share an apartment with 3 others, I don't have the space/time/money/car to get 20 ingredients for a recipe.

So...any ideas on how I can prepare them, preferably down to how to cut them? Something simple with few ingredients please.

You could stir-fry them with other vegetables such as peas (in the shell), whatever other vegetables you like, and serve them with some flavored rice or add Worcestershire Sauce and some other condiments to drizzle over the rice.
