Cooking, grilling & steak?

When I cook steak, I use the grill of my BBQ or I pany fry on my stove.

When using either source, I cook one side, then turn it over when the skin looks cooked and when it doesn't look raw on the sides of the steak. Blood doesn't seem to run through for me. Is it because I'm turning the steak over too early?

Is there a better way to cook steak? I hear there is a better method; I think this is it. Correct whatever I have wrong:

Put the grill onto high temperature. Let each side of the steak be cooked on this high heat for a short time to sear the meat.

Then cook on a lower temperature on both sides to let the middle be cooked.
