Cooking: From Stove Top To Oven?

I assume people take it from the stove top to the oven to "finish cooking" whatever it is that they're cooking. But I've seen some thoroughly cook salmon, for instance, completely on the stove top. Whereas, with others, they finish it off in the oven.

Now my question is this: Considering the last line above, is it a preference thing? Or does finishing off in the oven really cook/make it better?
