Cooking fries in a deep fryer?

I have a deep fryer in which i make fries in but I have always used vegetable oil and it has always come out great but lately i noticed a change cause now they're not coming out like normal and I'm guessing its the potatoes, so we tried several different ones but they all do the same and i thought maybe the oil so i changed it to canola oil but that does the same, there are these particular potatoes we got from a fruit shop once they are a darker shade of skin not like normal potatoes in a light brown shade of skin and these particular potatoes comes out perfect but now i can't find these potatoes anywhere now so I'm gonna try a market tomorrow apparently shops gets them from markets....

all i really need to know is what brand of potatoes and oil do you use to cook your chips in?
