cooking dried beans question?

can I oversoak dried beans overnight or longer and never cook them if they turn out to be very soft for eating....or soak overnight and then cook to a boil that lasts 3 minutes and then let it soak for an a hour........are these too methods of cooking beans healthy? or will they lead to indigestion and toxic food poisoning? in other words, I really don't want to spend too much time and money cooking dried beans but I want to avoid eating undercooked dried beans that can make me sick
