Cooking cows tongue how do you do yours?

I know this isn't going to apply to a Whole lot of poeople but my Dad just butchered and I have a HUGE toungue.

I usually simmer it all day but I am looking for something different, maybe slow roasting or somehting like that.

It is big enough so that I would roast some pickle some, and just boil some.

Any ideas?
