I'm using a recipe that calls for boneless but I have a bone-in to use.
I either put the bowed bone side down so just the ends of the bones touch bottom or put the fatty side down and let the bones "hanging in the wind".
It feels like 6 of one and half dozen of the other in choices.
Oh, and it's already cooking so to do it the right way soonest would be helpful. Thanks
