Has the subject come up yet? The 6-volume set that will supposedly
change the way we cook? The fact that is has a large section on
"foams" kinda makes me think I don't need it. I suspect there's a
chapter on vertical stacking/plating too.

I only read half of it, which was enough to make it clear I don't want
or need this set of books. But it's an interesting article, well
worth the $625.00 I didn't pay.
