I've noticed that some people are very lucky and can get away with not eating right and stay pretty healthy (luckily some people have naturally good immune systems!) and some people really have to make sure they are getting enough vitamins. When I look at my friend who gets sick often, I notice that her husband does not eat any better. In fact, they both eat a lot of junk food. The only difference I note is that the husband eats more protein than the wife, because for some reason she thinks protein is bad (and wonders why she is having trouble losing weight, but won't listen to anyone giving suggestions!). Even though they often eat similar things since they live together, she seems to get sick much more often than he does.
I am not so sure about tests for Vitamin C and D, but they didn't look into my vitamins when I had a regular blood test. They simply looked at my cholesterol, thyroid levels, blood sugar, iron, and all the ordinary stuff.
My advice for good nutrition is to make sure you are eating enough fruits and vegetables, and if not, make sure to take a multivitamin. She can always try taking a multivitamin each day and see how it helps in the long run. Even if she seems to still get colds and flu often, it's still beneficial to get the vitamins for other needs, and it helps boost your energy as well.
