Christening, Cold buffet ideas for 40 people?

Hi, it's our son's christening on 20th December and I need ideas for a cold buffet as the venue does not have kitchens. We will be eating around midday and we are preparing the food ourselves (to save money as it is so close to Christmas). Any ideas other than sandwiches? Don't want loads of leftovers either!

Fresh Fruits with a pudding dip
Fresh Veggies with Hummas or Dip
Chips and Salsa
Pasta Salads
Subway platter
Jello Salad
Fresh Baked Breads (Like Carrot Spice, Coconut and Lime, Bannana Bread, Pumpkin Chocolate Chip)

Get an Electric Kettle and have HOT CHOCOLATE! Stephens Hot Cocoa!
