I love breading my chicken breast with flour, eggs and bread crumbs! In egg mixture, put a little milk and parmesan cheese!
Dip thinly sliced breast first in flour, then in eggs and then coat with bread crumbs! I put a little extra virgin olive oil in baking dish and put chicken in pan! I bake in oven and turn half way thru!
While chicken is cookng in oven, on STOVE TOP, fry some frozen green peas in oil with chopped up onion and garlic and optional chopped up bacon! Add alittle water and any seasons u like!(organo, salt, pepper, basil, italian seasoning,etc) hen done- pour on top of chicken and add mozzarella cheese on top of chicken and pea! LET mozzarella cheese melt and then done! It is so yummy!
My mom taught me to make this! It is so good and easy!
