Cherry Pie Filling? does it need cooking?

The recipe for the filling is
2 cans tart cherries
1 cup sugar
3 tblsp quick cooking tapioca
1/4 tsp almond extract
1/4 tsp salt
1 tblsp butter
My question is when using tapioca does it need to cook on the stove to thickin before I use it to fill my pie, if so should it be cold when i pour it in the pie crust?
Also...do I need to cook the bottom layer of pie crust before adding the filling and lattice top crust?
If so how do I go about doing that without burning the bottom crust when I am cooking the top crust?
I have never made a pie before and I really want to get it right.
