how can this equation work:
CuCO3 + H2SO4 --> CuSO4 + CO2 + H2O
---
the reaction is a double displacement, so the Hydrogen displaces the Copper and vice versa so it should be
H2CO3 + CuSO4
---
does the H2CO3 break down because its unstable?
 
Yes. H2CO3 does break down. That's why carbonates bubble when treated with acid (leave a bit of eggshell in vinegar to see what I mean).

You are absolutely right from beginning to end.
 
It will become very easy for u if u always remember:
metal carbonate+acid gives salt +carbondioxide+water
AND ALSO
metalhydrogencarbonate+acid gives salt+carbondioxide+water
