Casual Catastrophe

I've got an NWZ-S545 16GB Sony Walkman and I created folders in the Music folder for each band to keep them organized, but the Walkman has different ideas. It doesn't care what folder a song is put in, it categorizes songs by the information tied to the file itself which I cannot figure out how to change. This has caused it to display multiple folders for the same artist and put almost a hundred songs in the "unknown" folder that it created. How can I change the information tied to the mp3 file so that the Walkman will categorize songs the way I want? I've tried opening the properties folder of many mp3's but it won't let me change any of the information in them.
