Crank1, try not to think about the monetary costs of the Ducati experience as a negative... think of every purchase as further enriching your life!!!...
... stay away from anything Ducati dealership and your enriching will be much more rewarding!!!
As for the Carbon Fibre, I've recently been liasing with Guido from Shift-tech.com, I'm sure he'll be posting on here to take a look at his stuff. I've ordered the following CF parts:
Front Fender
Rear Hugger
Belly Pan
Airbox Covers
Exhaust Heat Guard
Chain Guard
Key Guard
... oh, and a Ducati Corse gel sticker!!! (I think that's it ?!)
Being a member on here you'll be entitled to a 10% discount. I'm based in Australia and he's posted it all out to me for $48. Just checked actually and USPS says it's just left Miami.
He seems really on the ball and straight talks that he sells only the good sh#t, so I'll let you know in a few days what I think of the quality. I have very high expectations.
With regards to self installation, the above parts I believe I can install without any great fuss. The only item which may require a little more effort than removing a few screws will be the belly pan, but a couple of stands should make this a reasonably simple task.
The only CF part that I wasn't bothered about were the heel guards (I hear they can get wear&tear damage pretty easily), and the rear vents, where it's a bit of cut and shut with a little sealant to seal the deal.
Didn't bother with the CF dash cover as will probably get a tinted screen so wont see it anyway.

+1 on Guido. having never cared for my previous Ducati's (track bikes) the 848 was my first street only and he's been SUPER helpful. even gave me a punch down list of things to get with a few changes to it due to budget or practicality and i am there. go to his website and boot him off an email. VERY up and up and might not be the cheapest but you do have a Ducati and well, should be treated appropriately. happy spending (stimulus check)!

Exhaust Guard, Chain Guard, Front/Rear Fender - Excellent.
Mirror Extenders - Look like a great quality product. Solid, great finish. Yet to fit, though instructions look very simple.
Only one item was defect, which was a crack on the the Key guard cover. Sent email to Guido at Shift-tech with pic attached and got a reply within 5 mins apologising and stating he would send one out the same away... you really can't say fairer than that.
All in all, a very happy experience and I would highly recommend buying CF parts from them.
